Sweet Potato Toast!
There are many ways to enjoy a nutritious snack, app or lunch using sweet potato toast. I encourage you to get creative here. The possibilities are endless. Gluten free. Filled with yummy goodness. And did I mention FUN to eat?
Sweet potatoes are packed with Vitamins A, B6 & C + potassium, magnesium and fiber!

Basic Sweet Potato Toast:
▢ 1/2 large sweet potato rinsed and patted dry
▢ 1 teaspoon avocado oil or cooking spray
Topping Ideas:
▢ Chicken Salad
▢ Hummus & avocado
▢ Almond butter, banana and chia
▢ Cottage cheese and blueberries
▢ Avocado Spread & Egg
▢ Hummus & avocado

Instructions
- Preheat your oven to
425 F and line a baking sheet with parchment paper.
- Slice your sweet potato lengthwise into 1/2-inch to 1-inch thick slices.
- In a single layer, place slices on a baking sheet. Brush each slice with avocado oil then cook for 15 minutes, or until a fork can easily piece through the middle. (I personally like mine cooked until pretty firm!).
- From here you can top em and eat them, or you can store them in the fridge for meal prep throughout the week.
Note:
GREAT TIME HACK: Sprouts and Whole Foods often carry this frozen brand of Sweet Potato Toast that I love! You can even quickly air fry them!
