Peach & Halloumi Salad with Pumpkin Seed Pesto & Green Beans
Ingredients:
- 1 cup green beans
- 2 peaches (or seasonal fruit like pears)
- ½ cup fresh basil leaves
- 1 tablespoon pumpkin seeds
- 1 tablespoon pine nuts
- 1 garlic clove
- 1½ teaspoons coconut oil
- ½ teaspoon sea salt and black pepper
- 4 ounces halloumi cheese
- 1½ bunches arugula (or baby leaf greens)

Instructions
1. Submurge green beans in boiling water for 5 minutes before draining and put to the side. If preferred softer you can then steam for another 5 minutes.
2. Prepare your pesto - add the basil, pumpkin seeds, pine nuts, salt pepper and a splash of cold water to a blender and blitz until coarse. You may wish to add small amounts of water at a time while blending until your desired consistency. Place in a bowl.
3. Heat your coconut oil in a heavy based frying pan over a medium heat. Slice your halloumi into approximately 6 pieces and fry until browned on each side, turning
throughout.
4. While your halloumi is cooking slice your peach (or pear).
5. Arrange your salad leaves in a dish, topping with the green beans, peaches (or pears) and halloumi.
Drizzle over your pesto and enjoy!
